If a recipe calls for cream of mushroom soup this is the only way to go. Maybe you just want a hearty cream of mushroom soup by itself. Either way this soup is really scrumptious and super easy to make. You can make it even easier if you just use the presliced white mushrooms that don’t necessarily need washing. If you are going to have the soup by itself I would recommend the cremini mushrooms. Trust me. . . this recipe will “wow” your family and friends!
Home Made Cream of Mushroom Soup
16 oz. fresh button or Cremini mushrooms sliced
½ C shallots minced
2 cloves of garlic minced
1 ½ tsp. fresh thyme minced or ½ tsp. dried
1 T olive oil
2 T butter
2 T flour
4 C chicken broth
1 ½ C light cream and 1 T flour mixed
¼ C sherry
½ ground pepper and 1tsp. salt (to taste)
½ tsp, nutmeg (optional)
- Cut mushrooms into slices and then in half again.
- Melt butter and oil in large frying pan and add mushrooms. Cook for a few minutes and then add the shallots. When mushrooms begin to brown add garlic for one minute.
- Add 2T flour and stir until well blended, about 2 minutes
- Add chicken broth and sherry and heat over medium heat while stirring frequently.
- Stir in cream with flour and add seasonings.
- Heat until thickened slightly.
- Serve and enjoy or add to favorite dish.
